I want to give credit for this recipe, but don't know how to adequately do so. It was found sometime in the mid 1980's by my mom when she clipped this gem out of a grocery store flyer (when they included weekly recipes from readers - not to date myself!). This also happened to be back in the day when pancakes were generally just pancakes ... and you didn't really add anything into them other than the basic ingredients. I remember the first time I tasted these - the perfect combination of salty and sweet in one mouthful. It was a family favourite immediately.
Fast forward to my university days, and one day I found myself suddenly craving this recipe. I searched the internet high and low to see if I could find the recipe with no luck of finding that perfect combination of a batter that was smooth, not too dense, and combined pancakes with cheddar cheese in a simple and fast recipe. When I mentioned this to my partner, he laughed at me saying "Cheese in pancakes? Isn't that weird?" My response was "Do you find grilled cheese weird? Just try them!" So a quick call to mom and I had the recipe in my hands, and was soon happily consuming them. By the way, my husband now asks for these, so our love of this recipe became mutual.
Recently I dug this recipe back out of my archives for my son. He was feeling sick andneeded some comfort food. These pancakes once again came to the rescue and were a huge hit.
While I normally gravitate towards a thicker and fluffier pancake, there is something about how this thin, smooth batter spreads on the pan that allows the shredded cheese to get perfectly cooked in the pancake so that it's lightly melted and just a bit gooey for that extra yum factor. They are a savoury pancake, but coupled with a touch of maple syrup are a perfect pairing of sweet and salty in one bite. Enjoy!
Cheddar Cheese Pancakes
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Total Time: 20 minutes
Yield: 2-4 servings
(As a family of 3, we often make a double batch to have leftovers the next day or to be able to freeze some.)
3/4 cup flour
1 ½ tsp baking powder
1 ½ tsp sugar
1/4 tsp salt
1 cup of grated cheddar cheese
1 cup milk
2 tbsp melted butter or canola oil
In a medium sized bowl, sift together the flour, baking powder, sugar and salt. Stir the grated cheddar cheese into the flour mixture until everything is evenly combined.
Beat together in a separate small bowl the egg, milk and melted butter (or oil).
Stir the wet ingredients into the dry ingredients just to moisten.
Heat a lightly oiled griddle or frying pan over medium high heat. Spoon the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
