Pressure cooker steel cut oatmeal ... yes, it's a thing ... and it's fast!

A few years ago, I was traveling in Ireland after leaving a particularly challenging job, and one of the B&B's I stayed at served a traditional "Irish Breakfast". It was quite the spread, and I felt I hardly made a dent in the food offerings! One of the many options they offered was Steel Cut Oatmeal (with Bailey's of course!). It was so perfectly smooth and creamy and the best warm and comforting breakfast that I came home still raving about it. It changed my outlook on Steel Cut Oatmeal forever. It had never tasted so good! I tried to recreate the perfect sweet, silky and nutty flavour of it using stove-top methods, and eventually settling on a slow cooker variation. It was pretty good overall, but it was still not quite the same at the Irish version that I had indulged in.

Since then, Steel Cut Oatmeal has made a place for itself regularly at my breakfast table. I'm a big fan of oatmeal, and thankfully so is my family. While we love classic oatmeal variations, we're always in search of finding ways to meal prep faster, easier, and to generally make breakfast so that it feels less hectic on weekday mornings.

If you’ve got kids, and they are early risers that wake up ready to eat like mine does, making Steel Cut Oatmeal ahead of time (and quickly) as part of your meal prep in the Instant Pot is life changing! When I previously made this recipe in my slow cooker overnight, my final results were often mixed. Sometimes it worked perfectly, other times it would seem that my slow cooker ran a bit hot and overcooked it. The Instant Pot, however, cooks it perfectly every. single. time. And the beauty of a Steel Cut Oatmeal recipe is that you can customize your toppings, and change them up each morning, and it feels like a different breakfast.

There are a bunch of things I like about this version of Steel Cut Oatmeal, but at the top of the list is the no-refined-sugar thing. That doesn't it can't be sweet (hello ... maple syrup as a topping!), but I like the versatility of the a simple oatmeal that you can adjust to your personal preferences.

Another little meal prep tip that you might find helpful is to use some mason jars for storing the cooked Steel Cut Oatmeal in (which you can easily reheat them in as well), and purchase plastic screw on lids for easy stacking in the fridge and cleaning. My family prefers the wide-mouth mason jars since they act just like a little bowl, and are easier to stir in a little bit of milk to soften up the oatmeal when you're reheating it.

Creamy Steel Cut Oatmeal with Chia in the Instant Pot

Instant Pot Creamy Steel Cut Oatmeal with Chia – an easy recipe for smooth and creamy steel cut oats cooked in an electric pressure cooker. Ingredients:
  • 1 teaspoon canola oil
  • 1 cup steel cut oatmeal
  • 1 ½ cups water
  • 1 ½ cups milk (or coconut milk)
  • 2 tablespoons chia seeds
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon vanilla

Instructions:
  1. Grease the Instant Pot with the canola oil.
  2. Mix all ingredients together in the Instant Pot and stir together.
  3. Cover and close the Instant Pot and press the Porridge button, adjust cooking time to 15 minutes (high pressure).
  4. Once the Instant Pot has finished cooking the Steel Cut Oatmeal, allow a natural pressure release for 10 minutes, and then release the remaining pressure.
  5. Use a wooden spoon to stir the mixture well once you have opened the Instant Pot.
  6. Immediately divide into small serving containers (or one larger container) for storage. Let cool, cover and place in the fridge for up to 3-4 days.

Kids in the Kitchen:

This is such a great, and easy recipe, for kids to help make! Kids can help to measure the ingredients (depending on age and ingredient), add them into the Instant Pot, and push the buttons to start the Instant Pot.

Adult supervision is necessary, and support is recommended for releasing the pressure when the Steel Cut Oatmeal is finished cooking. Use caution when placing hot oatmeal into containers.
