Lately it's been sort of crazy around our house. After a longer than planned maternity leave, and searching for just the right job while I did freelance work, I suddenly found myself interviewing at multiple organizations. And in the blink of an eye, I was a working momma! So to say that meal times have been busier would be an understatement. Fast, easy, and even pantry friendly meals are key lately! Which is why I'm sharing with you one of our family's favourite super quick meals that we always have the ingredients on hand for. We have, what I fondly refer to as a "pantry meal kit" section. These are fast, healthy, back-up meals that we have on hand, just in case! Just in case dinner didn't turn out. Just in case you don't - or can't - make the meal that was scheduled. Just in case you had to push grocery shopping back one extra day for whatever reason.
This 20 minute Salmon Patties meal is on the table in what feels like no time, and is easily paired with a big salad from the garden (or fruit salad, in my toddler's case), and your family is ready to eat! Our family has also quickly boiled some corn on the cob alongside of this, sauteed mushrooms, or used whatever produce that required almost no effort to act as a side to these patties. Heck, frozen veggies or a simple bean salad (from canned beans) also works in a pinch, and couscous also is super fast side that also helps fill up the plate. Keep it simple!
We always try to stock a couple of pantry meals, varying from season to season (although we love having salmon patties year round). Other ideas might be ingredients for a soup or chili, or chana masala. I've even been inclined to hide a few pitas in the freezer and keep some canned mushrooms and pineapple on the pantry shelves should I ever need a fast pita pizza dinner (since we almost always have cheese in the fridge).
But even if you wanted to make this meal a staple, we love how fuss-free it is, and how it easily pairs with a number of side dishes. It's also a recipe for any skill level, making it hands-on and a lot of fun!

Total Time: 18-20 minutes
Yield: 16 salmon patties
- 1 (14.75 ounce) can sockeye salmon, drained, skins and large bones removed, and flaked
- 2 eggs, beaten
- 1/4 cup bread crumbs
- 1/4 cup potato starch
- 1 medium red onion, minced
- 2 cloves garlic, minced
- 2 teaspoons dried dill weed
- 2 teaspoons garlic & herb seasoning
- 1/4 teaspoon celery salt
- salt and pepper to taste
- 1-2 tbsp canola oil for cooking the patties
- In a medium bowl, mix salmon, eggs, bread crumbs, potato starch, onion, garlic, dill, garlic and herb seasoning, celery salt, salt, and pepper.
- Let rest 3-5 minutes to absorb potato starch.
- Form the mixture into 2 inch balls, and flatten into patties about 1/2 inch thick.
- Heat canola olive oil in a medium skillet over medium heat. In batches, cook patties about 5 minutes on each side, until lightly browned.
Kids in the Kitchen: Kids can easily help to flake the salmon, add the ingredients into the bowl, and even whisk/mix in the egg and blend all of the ingredients. These patties a quite moist and are easy for kids to form into patties for themselves with some assistance.
